Happy Sunday

Finding seven positive things is extremely difficult this week. But this is exactly the reason i brought back Happy Sunday: as a challenge to myself, so that i acually sit down and force myself to ignore the negative aspects and concentrate on some good ones instead.

Ok, i'll try:


1. You can find me on Instagram now! Still trying to figure out how it works- a nightmare for people of my age, lol. 


2. I finally, finally, finally have a cake stand- thank you so much MisterT!

3. MisterT finished reading the book i gave him on christmas, and decided to grow a new kind of mustache


4. Cutting one's finger is not a bad thing if you have a fancy funky clown band-aid


5. I started decluttering. It's a long and seemingly neverending process, but i already managed to throw out tons of some empty boxes and unused glassware.
6. We have 10€ left to buy groceries for the rest of this month- but that's ok, we can make it...
7. ...with a fridge full of pudding, thanks to The Coupon King ( aka my husband)

What happened this week?

1. I love reading magazines but rarely buy them. Seriously, i am sure their prices have almost tripled within the past few years. So i was thrilled when i saw a commercial for a new cake decorating magazine for only 1,50€, including a pretty cardboard cupcake stand, two butterfly cookie cutters and edible glitter. Steal!



2. The ultimate book of books has arrived: Preston Bailey's "Dear Preston: Doing Business withOur Hearts. A Practical and Friendly Guide to Running Your Own Creative Service Business"
So excited to read it and see how i can grow my little business!!



3. MisterT brought home a stash of fun socks for me. Love them!



4. We finally found a grocery store that sells the new Häagen Dazs Mint Leaves & Chocolate. We're huge fans of Häagen Dazs; their ice cream is out of this world, and yet this one simply ( and sadly) cannot beat the Publix Premium Peppermint Chocolate ice cream.



5. My husband's Valentine's gift to me: pink heart-shaped Esprit earrings to match the necklace he gave me eight years ago as one of his first gifts ever



6. Two new Amaryllis blossoms are growing rapidly, and i bought a new bouquet of gorgeous purple tulips




7. We did it again. We went to Ikea on a Saturday afternoon, when everyone else shops at this place. It's hell! Why do we always make that same stupid mistake??



Anyway, they have a cute new Flamingo collection ( SPRINGKORN) and i could not resist purchasing one of those adorable pillow covers. Too cute!
The main reason we went was to look at and possibly buy the lovely rollable side table VETTRE that is supposed to become my new moveable craft table.
I bought it and hopefully this will finally keep me from constantly cluttering up our dinner table with paper, fabric, glue, twine, clay, etc...

DIY: Washi Tape Canvas

This DIY was so fast that it is almost ridiculous to call it a 'project', let alone write a tutorial.


I made it early in the morning before i went to work. Simply grabbed a blank canvas and put on the tape.
Super-duper quick and easy!

Welcome back to "Happy Sunday", where i share 7 non-negative things from the past 7 days:


1. I purchased two potted Amaryllis and their incredible gorgeousness makes me happy! Even more so in combination with beautiful tulips


2. Our birdhouse had a couple of visitors last weekend.


3. I made the 100th sale in my shop; these cake flags go to a bride in Brasil. How exciting!



4. I'm extremely proud of my husband. His hard work and suggestions for improvement not only make him popular with the other heads of department, but also with the general management
5. My work is ok. Still not my dream job, but this week was ok
6. MisterT, who is slightly addicted to a coupon website, found a great deal on said site for a huge poster print. A 90% discount definitely cannot be ignored, but more on that later
7. We had a few snow days- i love snow!


Lemon Day ( Two Recipes)



Today was the first time in what feels like ages that the sun was shining. I am so ready for spring and summer, but the next round of ice and snow is already on its way. 
Anyway, I felt "yellow" today, which put me in the mood for some lemons. 


At first, i made this surprisingly refreshing and tasty Lemon Cucumber Water.

Then i made a Lemon Cake.


We are super greedy when it comes to cake, that's why the photo only shows half of it...

The recipe is adapted from this one ( in german), with just a few minor changes as well as some coconut shreds for a summery and tropical feel. The cake turned out very moist and fluffy.
Yum!




Ingredients: 

2 lemons
250g butter
200g sugar
280g Mehl
4 eggs
2 tsp baking powder
pinch of salt

5-10 T coconut shreds
125g confectioner's sugar
1 T hot water


Instructions:

1. Line a loaf pan with baking paper
2. Preheat oven to 180°C / 350F
3. Melt the butter.
4. In a bowl, combine butter and sugar, cream well, then add the eggs.
5. Mix in the juice of one and a half lemons, the flour, baking powder, and salt, and whisk well.
6. Pour the batter into the loaf pan and bake 40-50 minutes.
7. Lift up the baking paper along with the cake, and let cool for 10 minutes ( preferably on a cooling rack). 8. Remove the baking paper and let cool for another 20 minutes.


Then, prepare the glaze:

In a small bowl, mix confectioner's sugar with 1 tsp water and stir well. Now add a few drops of lemon juice. Be careful, the glaze must not be too liquid!
Mix in the coconut shreds and cover the cake with the glaze, then immediately sprinkle the cake with a handful of coconut shreds.

Let the glaze dry, and enjoy your cake!
