Today was the first time in what feels like ages that the sun was shining. I am so ready for spring and summer, but the next round of ice and snow is already on its way.
Anyway, I felt "yellow" today, which put me in the mood for some lemons.

Then i made a Lemon Cake.
We are super greedy when it comes to cake, that's why the photo only shows half of it...
The recipe is adapted from this one ( in german), with just a few minor changes as well as some coconut shreds for a summery and tropical feel. The cake turned out very moist and fluffy.

Ingredients:
2 lemons
250g butter
200g sugar
280g Mehl
4 eggs
2 tsp baking powder
pinch of salt
5-10 T coconut shreds
125g confectioner's sugar
1 T hot water
Instructions:
1. Line a loaf pan with baking paper
2. Preheat oven to 180°C / 350F
3. Melt the butter.
4. In a bowl, combine butter and sugar, cream well, then add the eggs.
5. Mix in the juice of one and a half lemons, the flour, baking powder, and salt, and whisk well.
6. Pour the batter into the loaf pan and bake 40-50 minutes.
7. Lift up the baking paper along with the cake, and let cool for 10 minutes ( preferably on a cooling rack). 8. Remove the baking paper and let cool for another 20 minutes.
Then, prepare the glaze:
In a small bowl, mix confectioner's sugar with 1 tsp water and stir well. Now add a few drops of lemon juice. Be careful, the glaze must not be too liquid!
Mix in the coconut shreds and cover the cake with the glaze, then immediately sprinkle the cake with a handful of coconut shreds.
Let the glaze dry, and enjoy your cake!
